INY'S EGG BAKE - Iny Bratten modified by Jon without permission

1 30 oz pkg Hash brown potatoes, thawed 1 lb Jimmy Dean regular sausage cooked and crumbled 1/2 cup Chopped onion 1/2 cup Chopped green pepper 1 cup Cheddar cheese, grated 10 Eggs 1 cup Milk 1/2 tsp Dry mustard 1 tsp Salt 1/2 tsp Pepper

Brown and crumble sausage then add onion and green pepper and cook until browned, remove from heat and allow to cool. Beat eggs and milk together with spices in a separate bowl. Grease 9 x 13 pan. Spread potatoes (uncooked) evenly in pan, add sausage mixture and cheddar cheese and mix evenly. Pour egg mixture evenly over potato/sausage mixture and sprinkle over all with additional shredded cheese. Preheat oven to 325 degrees and bake for 1 hour.
